This was a delicious weeknight dinner!

First I cut a sweet potato, drizzled with coconut oil and roasted in the oven at 375 for 30 minutes. 

Then I washed a bunch of kale. I cut half an avocado and massaged the avocado into the kale, getting my hands messy. This helps to break down the kale making it less tough and easier to digest.

For the dressing I whisked together:

-2 tbsp olive oil

– 2 tbsp fresh lemon juice

– 1 tsp honey

– 1/8 tsp salt

– 1/8 tsp  freshly ground black pepper

I cut up some tempeh, drizzled with a little coconut oil and added to the baking sheet with the sweet potatoes for ten minutes. Then I tossed the sweet potato and tempeh with the salad and dressing, added some sliced avocado and sprinkled with hemp seeds.

A wonderful vegetarian meal that shows that a salad can be very satisfying for dinner!
