Salad with gluten free nut bread

Hello from the West Coast!

This week I’m on vacation so I’ll keep this short and sweet. I had a family wedding in Pasadena, and tomorrow I’m taking a 2-day Amtrak journey from San Diego to Seattle. Lots of time to read, rest and watch the world go by!

Last week’s health challenge was to spend 15-minutes a day doing creative brainstorming for my book idea and it was AWESOME. I made so much progress instead of keeping my idea on the back burner.

This week, I wanted to do something along the lines of eating healthy on the road. Yet when you travel you have to be a bit more flexible about food. So I decided to challenge myself to eat one salad a day. I always do this at home but I’m taking salads to the road!
