This is a simple and wonderful gluten-free breakfast option. Quinoa is a grain-like seed that’s packed with protein, it contains all the essential amino acids. It’s important to rinse the quinoa before cooking and if you really have your act together it’s ideal to soak it overnight.
Then you put the quinoa in the rice cooker, meditate for 20 minutes and voila! Breakfast is ready.
I used 1/3 cup quinoa and added banana, blueberries, shredded coconut, sliced almonds, dash of cinnamon, squeeze of honey and some ground flaxseed. Would also be great with a splash of almond milk or coconut milk.
